Real animal sacrificed?

We all know that films from the past were kinda reckless when it came to animal safety and lives. The one thing that is common in films set in antiquity are sacrifices to gods, which makes me wonder if they really killed an animal for such scenes.

Not a sacrificial offering but this scene from ULYSSES clearly shows that the animal being cooked is real.

I don't think they would really kill any of the animals, but the track record for how they used horses was not good. They used some kind of set-up that when the mounted horses were charging their front legs would collapse and fall to the ground throwing the stuntman forward to the ground. This was done on both sides of the Atlantic, but finally banned in N. America and considered cruelty to animals. Is there a site somewhere about this practice?
